The engine will influence performance and things like advanced effects. No engine will make your game look good or bad.
How professional the game looks is (IMO) all to do with how professional your graphics assets are, and how slick your code is.
Sloppy code, badly animated models and badly drawn textures + Crysis engine will get you a awful looking game.
Decent assets and the right code + a far less advanced engine can get you Quake.
