Looks like this is a known issue in Dark Monkey theme (3.1-beta1-SNAPSHOT can't display chinese charset · Issue #73 · jMonkeyEngine/sdk · GitHub). Still not fixed. Maybe you manually fixed it to SDK 3.3?
Well, anyway glad you got it working. There is also the FlatLaf Dark if you prefer dark themes. Or then just change the font used by the Dark Monkey from the settings…
