I'm having much troubles to understand how to work with JMonkey.

Well I have to agree that if the user guide was the first document you looked at, it might seem a bit confusing… however there are better alternatives available. If you have not yet, check out the tutorial section in the jMe WiKi. These tutorials introduce you in a very nice step by step manner to the features available in jME.
As to the demo you asked about a person being controlled by keyboard and in third person view… well nothing exactly like what you described has crossed my path yet, but something similar is available in FlagRush tutorial series.
